Quick  &  Easy Copycat recipe

A few years ago when our small town opened a Chicken Salad Chick restaurant, I was skeptical on how long they would remain open. I thought to myself, “how much chicken salad does this town really eat?” Apparently enough for them to remain open all this time. With that said, I tried them and was sold!

I fell in love with their Lemon Basil chicken salad and felt the need to recreate the recipe…so I began to deconstruct the flavors while noshing one day in the store. I could taste the fresh basil, the light lemon, delicately diced onions and celery, and the right amount of tangy mayonnaise. After I identified all the flavors, I went to work in the kitchen to devise the perfect blend to make the copycat version to eat at a fraction of the cost.
