Savory Beef Popovers
Our family loves popovers! An easy to make dinner meal, snack or little breakfast item. We modified this basic recipe using our delicious olive oil. For a full meal in one, we added tapenade, ground beef and Feta cheese for a truly savory popover. Dinner is done in no time.
Ingredients:
- 4 eggs, room temperature
- 1 1/3 cup whole milk
- 3 Tbsp choice of any Oviedo Olive Oil Extra Virgin Olive Oil (we used Rosemary and Garlic Herb for this recipe)
- 1 1/3 cups all-purpose flour
- 1 tsp fine sea salt
- 1/4 cup Kalamata & Caper Tapenade
- 2lbs Ground Beef, Cooked, Oil drained, reserved
Preheat oven to 450 degrees and place the popover pan inside or cupcake tin works as well. Combine all wet ingredients and blend well. Can use a mixer or a blender.
Add the flour and salt and blend another 15 seconds. Add tapenade and ground beef if you choose to have these inside the popover.
Remove the hot pan, spray with non-stick spray and fill the cups 2/3 full with mixture. Place back into over for about 15-20 minutes. Reduce heat to 350 degrees and continue to bake another 15 minutes. Making sure not to open the oven door during the baking period.
Remove the popovers from the pan and place onto a cooling rack. Best served fresh and warm! Sprinkle these savory popovers with Feta cheese.
