Cherry Balsamic Olive Oil Cookies

Ingredients:

1/2 cup Oviedo Olive Oil Butter EVOO
1/4 cup granulated sugar
3/4 cup packed dark brown sugar
1 large egg
2 teaspoons vanilla extract
1 tablespoon Oviedo Olive Oil Cherry balsamic vinegar
1 3/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup dried or cocktail cherries, chopped
3/4 cup dark chocolate chunks

Instructions:

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Mix Wet Ingredients: In a large mixing bowl, whisk together the Oviedo Olive Oil Butter EVOO, granulated sugar, and dark brown sugar until well combined. Add the egg, vanilla extract, and cherry balsamic vinegar, mixing until smooth.

Combine Dry Ingredients: In another bowl, sift together the all-purpose flour, baking soda, and salt.

Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix. Gently fold in the chopped cherries and dark chocolate chunks until evenly distributed throughout the dough.

Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheets, leaving about 2 inches between each cookie to allow for spreading.
